Strawberry Shortcake donuts!


Well I woke up and had several trays of fresh picked strawberries from the garden so I figured I needed to find a way to  use them in breakfast.  So this is what I came up with and they were delish.

First I got a box of Yellow cake mix from the pantry. I used a No Sugar added mix because my hubby is a diabetic but any yellow cake mix will work.
I mixed it according to the box directions and then started to cut up strawberries into pieces the size of small blue berries and threw them in.

then I put the batter in my baby cakes mini donut maker but you could also use a donut pan in a 375 degree oven regular donuts for 15 min or mini donuts for 8 min.
after they are fluffy and slightly brown I put them on a plate to cool. While they cool I made a frosting/ glaze mine was more of a glaze but if you add more powdered sugar to make is a frosting would be yummy too.

Glaze

1/4 C softened butter
4 Tbs milk
1 tsp almond extract
3 strawberry finely chopped
3-4 C powdered sugar

beat the butter, extract and milk together and then slowly add the powdered sugar until it is glaze or frosting consistency depending on your preference. Add the strawberries and beat about 1 min longer to allow the strawberries to break down alittle.


Now it is time to either frost your donut or dip them in the glaze.

choolate chip cookie ice cream bowls

For dessert we made cookie bowls and homemade vanilla ice cream. First we made cookie dough the can be found here http://www.tristastastytidbits.blogspot.com/2012/05/brownie-cookie-cups.html but we used half the amount of chocolate chips. Then we placed them on a upside down muffin pan
we quickly learned that you need to grease grease and grease the pan some more so they don't turn out like this

so we used the left over dough we had to try again with the extra grease

after they where done baking and cooled we figured out the trick to taking them off the pan is to spin and pull. Next time to make some ice cream. We used a recipe from Paula Deen Southern cooking Bible.

Real homemade vanilla ice cream

1 1/2 C whole milk
3/4 Sugar
1/8 tsp salt
6 large egg yolks
1 1/2 C cold heavy cream
1 tbsp vanilla extract

first we place a bowl in another bowl of ice water to cool. then in a sauce pan heat milk, sugar and salt to a simmer mix 1 cup of milk mix into the eggs and then slowly pour the eggs in to the remaining milk and heat over medium heat for 3-5 min to thicken into a custard then transfer into the chilled bowl and stir until room temp. Add the cream and vanilla extract. Cover and place in the fridge for 2 hrs before putting it in the ice cream maker.
then it was time to assemble

We topped ours with whipped cream for a little something extra!!

And now its time to eat!!!!!!!!

Personal Pizza's

Today we made personal pizza for lunch. 
we used:
shredded mozzerela cheese but you could use others
butter milk biscuits
pizza sauce
and pepperoni

First we preheated oven to 400

We stretched the biscuits and placed on a cookie sheet.  Put a tablespoon of sauce on and spread out, then top with cheese and pepperonis.
bake for 10-12 minutes.

here is my finished heart shape pizza. It was Yummy!!!!!!!!

Sock bun

Alright my first post and not a post about food :-/ but here is a great trick I learned from Pinterest! A sock bun you cut the end of a sock off and roll it into a donut and then put your hair around it and it looks so cool!!!!
